Quick Status Update...
Sorry I have been MIA from writing on my blog. Things have been busy here at work as we gear up for our annual auction benefit next Saturday. Plus, on the homefront, my dad was ill with a bladder infection that landed him in the ER two weeks ago so I had to take off a day from work to go be with him and my sister and every day calling my sister twice daily to check in on how he was doing because he came home with a cathaeter...which at first wasn't the easiest thing for my poor sister to deal with but by the end of that week she became a pro - so to speak! He will continue the meds for another month (minus the cathaeter for now) and reevaluated him then.
I have lost 11 pounds so far on my low-carb eating plan and I am feeling great. I will have to post some photos soon and I changed my hair as well. Feeling like a new me. I am very pleased at how this low-carb eating is working out and I am not feeling deprived either which is so great. Yes, at first resisting the bread, pasta and anything with flour it in was hard, but now I have found alternatives to these things...like there is a Sara Lee 45 calorie, 8 grams of carb per slice bread out on the market that is really tasting, but I only allow myself to eat bread once to twice a week because I do notice when I do...I bloat! With pasta, I have found Dreamfields which is low-carb as well and again only allowing myself this occasionally as well. I love that I can eat chicken, steak, ribs, pork and fish as much as I want. So, this makes it pretty easy going out to restuarants because finding one of these on the menu. I usually opt-out of getting any sides of rice, potato or fries and ask for either steamed veggies or go for a side salad. I love that I can use regular full fat dressing too! Tracking what I eat on MyFitnessPal is so the key for me and I have found other low-carbers on there so it is great to interact with people that are on the same eating plan and share ideas and recipes too.
Our summer vacation on Cape Cod is only alittle over a month away (end of May) and I can't believe it will be here before we know it. I will be so ready for a week away by then because at work this is our busiest time (April/May). E's sister, brother-in-law and niece (16 yrs old) are coming with us this year for four of the days so it will be nice to have company. The weather here the last two days gave us a taste of summer like weather (in the low 80's)...just perfect after the long snowy winter we had so I am hoping that end of May on the Cape be this nice too...fingers crossed!

ReplyDeleteYah, important take care of yourself. Don't worry about us readers. We'll still be here. :) Have fun in Cape Cod-I had been there before and it's beautiful, especially Truro and the P-town (that is if one can ignore the tourist traps). :)
